Kate's Chocolate Sweet Potato & Peanut Butter Waffle Toastie

To top it all off, it's vegan, gluten-free, redefined sugar free, high in protein, super healthy and most importantly tastes SO good! Thanks for yet another beautiful take on our chocolate, Kate! Kate more great vegan recipes.

 

 

INGREDIENTS: 

2 pieces of rye bread 

1 medium sweet potato (130 grams) 

2 tbsp crunchy peanut butter 

1 bar of dark chocolate 85% or 101%  

 

DIRECTIONS:

 

  1. You can either steam or bake the sweet potatoes, Kate says she usually seasons them with cumin, paprika, tumeric & cinammon plus a bit of salt and pepper. Kate says she doesn't really peel them unless she plans to make a sauce with them. Bake them for about 45 min until they are soft and the kitchen is smelling AMAZING. Suggest to do it in batches and save them for several recipes
  2. Spread 1 tbsp of PB over each piece of rye bread. Add the sweet potatoes and smashed all together in the waffle machine
  3. Fancy that thick chocolate layer on top? Just spread as many squares of dark chocolate as you wish on the toastie once it's WARM. The heat will magically melt all that cocoa... Easy - peasy and you will get EXACTLY what you see in this picture.
